Server-side tracking moves event-emission off the user’s browser and into your backend or a dedicated server-side container (sGTM, Stape, Cloudflare Workers). Benefits: bypasses ad-blockers, first-party cookies, lower client-side payload, full control over which fields leave your boundary. Cost: ops burden, bigger DevOps tail, requires platform-specific CAPI/Conversions API integrations per ad platform.
